I had a Konatsu cake (a kind of lemon variation) with cream, custard, sponge cake and caramel. The sweetness and acidity were perfectly balanced, and also the textures were great. The caramel was perfectly creamy and without bitterness, and also not too sweet. From this unusual composition you can taste that their pastry chefs really know what they're doing.
