To give you an idea, they are similar to "tori nanban soba" and "tori niku ramen" in Kansai. I found a soba shop near my house, about a 10-minute drive away, so I decided to give it a try. The dish, made with locally sourced chicken (or something similar) and thickly cut soba unique to the Okitama region, was delicious and warming.
