In my personal experience, I ordered tacos without cheese or sour cream, and the server acknowledged my request for no dairy. However, my plate was almost delivered to me with cheese before being sent back to the kitchen. After a few more delays, the dish finally arrived with some bits of cheese still present, indicating that the kitchen had attempted to pick them out rather than remake the dish.
