Many laudatory superlatives could be used to try to define the cuisine of Bernard Bordaries. They would all be welcome, as the quality is high, because the chef takes us very far in perfection, from the simplest plate to the most sophisticated. The appetizer sets the tone for the celebrations: unexpected and exquisite. There is no extravagance or eccentricity: only accuracy. Precise tastes, tasty, refined combinations and permanent discoveries. If gastronomy is an art and if art is a language which, through knowledge, its poetry, its aesthetics provokes emotions then Bernard Bordaries is a very great artist.
