It works on a fixed menu and it is best to go on Sunday, lunch, getting prepared with a good appetite because the courses are so many and leaving the rush out. The kitchen is practically zero km so there are vegetables, meats and typical cheeses along with obviously meats. It starts with season appetizers that you won't taste elsewhere because they are extraordinary compositions of the cook that place the ingredients and smells of this land but following alchemy and new ideas. Two first, two second sweets and coffee. All homemade. I ate them several times and each one was a surprise. The price quality ratio is unbeatable. The esteem that the restaurant has earned, also from illustrious figures of Italian culture, is fully deserved. Absolutely recommended.
