We've previously only eaten here at lunchtime during the week, but tried the weekend menu last week and were absolutely delighted. There's no prix fixe, but the value for the quality of food presented is outstanding. I had the pork chop from the famous local pork noir de Bigorre, served with a reduction of local Madiran red wine, which was delicious. First time trying this restaurant. Everything is made on the premises. The starters were good, and imaginative. My beef was acceptable. The menu is a reasonable price, wine is included. However three members of our group wished to have salad instead of the main dish included on the menu. Super chouette petit resto avec un délicieux plat du jour avec dessert à 19€. Brochettes de gambas et chorizo en plat, petit bémol sur le dessert qui était un moelleux pas très moelleux mais le cadre et le concert fait oublié tout cela !
When this restaurant first opened it showed at lot of promise. Unfortunately in recent months it has gone downhill fast. Today, a lovely sunny Friday when the other restos on the square were packed out, we were among the eight customers eating there. The reasons become evident very quickly. Very poor choice on the set menu supplements on two of three main courses, one of which was duck which is a staple around here!! and the other on the burger service which can at best be described as 'casual ' and food which had quite obviously been brought in from the likes of Brake Brothers. If you service beef tough as old boots mustard is a standard accompaniment but no, they had none. If you serve a burger very ordinary for the price ketchup is a standard accompaniment, but no, they had none. At a price where every other local resto includes wine this was an extra. I don 't expect it to survive the winter and frankly it doesn 't deserve to,
Date night with my lovely wife. We hadn't tried La Fabrique, so thought we would give them a try based on an interesting looking menu. Foie gras was a bit tasteless (how is that possible? , and the entrecôte were overdone. Nothing badly wrong with the food, but not inspiring in any way. Prices seem a bit on the high side for the area as well I hope not to try to prop up a failing business because this will inevitably backfire. The service was great however top marks for that!
A little disappointing today. We have been here several times prior to covid and have been pleasantly surprised. Today we visited with friends and the menu de jour was pretty good except for the rump steak which although was brilliantly cooked (med rare) was full of sinews. Our friends had the tornadoes of duck which were unfortunately overdone, the chef left them on too long. The crumble of peach was nice but more of a tartlet than crumble and a little too sweet. Coffee excellent

If you're not feeling ambitious stick with the burgers really tasty, cooked to your liking with an actual melted slice of local ewe's milk cheese. Finish with a café gourmand (pictured) Not to be missed!
