Sacha Madrid is truly an institution. You feel it the moment you step inside. It is not easy to find a table here, and I was lucky to get a late lunch reservation. The ambiance is full of character, with ultramarine blue floors and white walls adorned with framed historical photos and artwork. The space feels like a charming home, and the combination of blue and white tones with crisp white tablecloths creates a warm, inviting atmosphere. The service was impeccable from the start, the staff was incredibly attentive and kind. The food combines classic tradition with artistic expression. The “fake lasagna” filled with king crab was outstanding, delicate yet rich in flavor. A large langoustine served on a vegetable sauce was equally memorable. We also tried the “Snowfall” salad, a refreshing mix of peach and young pea shoots with a perfectly balanced dressing. The sole meunière was flawlessly cooked, delicate and buttery. It paired beautifully with a non-oaked Albariño, which was crisp, fresh, and vibrant. Dessert also deserves a mention. I forgot the name, but it was absolutely delicious. I will let the photo speak for itself in my post. The menu was only in Spanish, but we used our phones to translate and never felt lost. The manager and our waiter explained every dish with care and enthusiasm, so the language was never an obstacle. We were truly happy to find a table. Sacha is much more than a restaurant. Absolutely original excellent clean, and casual looking but at same time rich on delivering flavour and precise. No wonder it has the reputation of a quintessential original basque bistro that precedes it. Thoroughly enjoyed the food, highlight was the lamb kidneys as well as Sacha’s take on crab lasagne, lobster salad was excellent and the cod tartare simple but exceptional! The service was caring, we were looked after by the manager Jason and the attention as paid throughout our meal: serving portion sizes (splitting dishes into two plates before serving etc). We finished with a lovely home made and fresh tasting sorbet on the terrace. A meal to remember. MUST visit when in Madrid. Food: 5 Service: 5 Atmosphere: 5
