At the heart of our brewing philosophy is a dedication to using 100% Colorado grown ingredients. We take great pride in sourcing all our grains, hops, and fruits from local growers, fostering a deep connection with our community and the land. Our brewing process is inspired by traditional methodologies, specifically the Méthode Traditionnelle. We specialize in spontaneous and barrel-fermented beers, allowing nature to take its course with minimal intervention. Each brew begins with a marathon boil, after which our unique beers chill and inoculate in a koelschip—capturing the essence of our environment much like a sourdough culture. After a brief rest, our cooled beer is transferred to oak barrels for fermentation and years of maturation, with the potential for blending and refermentation with fruits and spices to create something truly special.
