Guanciale in a carbonara should be crispy, not soggy. You can 't serve it poached The young fella that was serving, did not have much experience or training. At this level of pricing, the waiter should understand when you can interrupt and when its the time to take away the plates from the table. Not while I was still eating. Our understanding is that Alle Scuderie has only recently opened to non-guests. We had a wonderful time and even managed to squeeze a brief visit to the Castle’s lobby bar (what a setup! . The Amatriciana was just perfect and the poached egg salad a great appetizer. We will be back as guests soon!
Very nicely designed interior, outside rather bland. Too many flies around when sitting in open air. Views grom terrace are not spectacular unfortunately. Food is ok, Italian classics. Waiters are very correct and attentive, dressed in tailor made attire. Cool.
