Eva Bar Restaurante - Lisboa

TLDR: creative Portuguese cuisine in a place with energy that is easy to relax. The waiters here are attentive, energetic, and polite. I ordered a croaker fillet, which came with a generous bed of broccolini. The brocollini was very well sweated and salted, but still had a fresh toughness to it. Whereas many restaurants offer serve vegetables along with the main course mainly to dress the plate, here, the vegetables seemed to be offered mainly to balance the diet with enough fiber. The sauce was a reduction of mushroom juice, cream, and miso. Though the Japanese use miso to cook fish in a variety of ways, most commonly for simmering mackarel, using miso for Western pan-fried fish is rather refreshing and creative. That said, the finest flavors of miso come from the fermentation the soybeans that it is made of, and is a subtle flavor that easily vanishes when cooked for too long (usually a few minutes) or cooked over high heat. This is why in Japanese cooking, miso is often added last, and hardly ever exposed to high heat. The absence of this flavor indicates that either the miso was cooked for too long, or it was overpowered. The croaker fillet was beautifully seared and generously salted on the skin, which had a soft crisp and cling to the fish. The croaker was lean and flavourful, although a tad undercooked such that there was a slightly translucent strip of fish meat in the center that resisted flaking. The food here was not bad, although I am not sure if I would be willing to return, because Lisbon has many other competitive alternatives.

Desde a entrada à sobremesa, estava tudo ótimo Os cocktails são maravilhosos e originais. A qualidade dos ingredientes e a criatividade de cada prato são pontos a destacar! A simpatia da equipa faz-nos sentir em casa
