The combinations were less wild and striking, but rather filigree and more reserved, but also more relaxed and less forced. The desserts were clearer and more precise for me. All this confirms my Falco opinion for the repeated time: one of the most interesting kitchens in the country, which has always been offering new ones and has repeatedly confirmed this top level for several years – despite constantly new dishes.

But some times the resulting complexity does not convey to me – strong and harmonious aromas shape the corridors and the contrast points I read more on the map than I find them perceptible on the plate. I believe that too much strength has brought too much blur to the courts. I assume, however, that this is a snapshot, because the basic characteristics of the individuality, tension and quality of the products are still sharp.

The menus that I have eaten last year have been a bit more subtle and filigree, now again strongly complex aroma structures characterize most courses and Peter Maria Schnurr goes back to strengthen (my) limits. However, since everything is more precisely coordinated, these limits are not exceeded. And so the menu is as good as the previous ones.
