So I was absolutely spoiled and got to try so many dishes! The chef even stopped by the table. Everything was made with my dietary restrictions and allergies in mind. The amount of food that came was insane, but I ate almost all of it. The booths are private and intimate. It’s dim lighting inside but you can see just enough. The service was amazing. Everyone was so friendly and attentive. Definitely a must try!! View all feedback.
What Alison R doesn't like about Carbone:
If you 're looking for a romantic spot, avoid this place at all costs. The service is terrible, the food is mediocre and the music is so loud that you can 't talk to the person next to you without shouting. When we asked why the music was blaring, the waiter told us in a condescending tone that this is a NY restaurant and this is how it 's done in NY. As a native New Yorker, it 's clear no one there has ever been. Ev... View all feedback.

This is one of the best Italian restaurants on the strip. The menu is diverse and all the pasta is homemade. There are plenty of extras in the service including cheese, meats, pickles cauliflower, fresh bread and dessert all included in dinner. Servings are plentiful and well prepared. The service is attentive and not rushed. Music is great and the place is buzzing. Decor is fresh, clean and the freshly arranged flowers are beautiful. We left stuffed with food and eager to go back!
Carbone is the Best restaurant in Las Vegas. When one thinks of a culinary masterpiece set amidst the vibrant tapestry of Las Vegas, Carbone at ARIA inevitably emerges as a luminary beacon. This restaurant doesn't just offer Italian-American cuisine; it elevates it to an art form. Walking through its doors, you're met with a nostalgic homage to mid-20th-century New York Italian eateries, a delightful paradox that juxtaposes classic charm against ARIA's modern luxury. The stars of the Carbone experience are numerous, but there are some undeniable standouts that deserve singular attention. Firstly, their Caesar salad is not just good; it's arguably the best in America. Prepared tableside with flair and finesse, each ingredient, from the crispest romaine to the anchovies and freshly grated cheese, harmonizes to create a symphony of taste and texture. Each bite is a reminder of why this classic dish has stood the test of time, and Carbone's rendition might just be the gold standard. As you delve deeper into their menu, the spicy rigatoni demands your attention. This dish is a masterclass in balance and boldness. The pasta, cooked to perfect al dente, is bathed in a rich, creamy tomato sauce that packs a kick, sending tingles of spice dancing on your palate. Each mouthful is a celebration, a crescendo of flavors that makes it clear why this dish has garnered a devout following.Yet, it would be remiss to overlook the veal Parmesan. A behemoth in size and taste, this dish is the epitome of Italian comfort food. The veal is succulent and tender, enveloped in a golden, crispy crust, smothered with just the right amount of cheese and tangy tomato sauce. It's a dish that conjures memories of old-world family feasts, and yet, Carbone manages to present it with a flair that feels quintessentially contemporary. The ambiance at Carbone further enhances the dining experience. With its retro black-and-white checkered floors, plush leather booths, and vintage photos adorning the walls, the atmosphere is both intimate and grandiose. It's easy to lose track of time, swept up in the magic of the moment, surrounded by the mellifluous notes of conversation and clinking glasses. In conclusion, Carbone at ARIA isn't just a meal; it's an experience, a journey through time and taste. For those in search of dishes that resonate with soulful authenticity while being presented with modern panache, this is a gastronomic destination that simply cannot be missed. Every dish tells a story, and with offerings like the Caesar salad, spicy rigatoni, and veal Parmesan, those stories are nothing short of legendary.
Food was delicious! Everything was made fresh to order. We shared for 2 people the baked clams, Caesar salad, veal parmigiana, spicy rigatoni, and chocolate cake. Portions are great for sharing and all delicious!I will say it was a very expensive place to be, even for Vegas! We had the above plus 2 drinks and 2 glasses of wine each. With 20% gratuity it was just over $500! But, the place is iconic and glad we went! Would go again, but know what to expect!
