At the moment you go, you'll know what to expect. The smell of fish broth just fills the room and let me saliva for the noodles. I ordered the oysters and I would highly recommend that it was very unique and tasteful. The noodles are by default relatively soft thin noodles that perfectly absorb the soup. That said, if you prefer more chewing noodles, you can opt for 3 other types, but need to request it especially. If you don't speak Japanese, this task can be a little hard. It's a 30-minute walk from Kawagoe Train Station if you don't drive, so I would recommend it if you have a lot of time in the area. Definitely come when you drive to Kawagoe as it is on the way.
It's worth waiting in line for a while during the launch time. I ate oyster noodles, which, to my knowledge, is not rahmen in a strict sense but falls in a broader noodle category, and a small braised pork rice bowl. at the first sip of noodle soup, a rich flavor of oyster instantly rose to my nose and a hint of lemon had a perfect match with the richness of oyster. Noodles were thin and had a nice balance with the soup. At the fist glance, the presentation of braised pork bowl was a bit eccentric in that it was fully covered by sheets of roasted pork but the taste was rather traditional. Although the location is away from any transportation hubs (neither Kawagoe, Fujimino, nor Sayama), it worth visiting if you are noodle lovers.
Waited for 30 minutes even in the noon of the working day, I like the Niboshi soup and the 2 kinds of chasyu also very delicious, the most surprise for me is the seafood Ton, so don't miss it.
Favourite was the sardine don and tsukemen. Thick, super flavourful and well balanced stock with light citrusy notes, not fishy at all.
