Egg/milk clearly labelled they understand veganism fairly well. Great to have an option in Kawagoe! What User doesn't like about Kosushi:

For around 1800 yen you get a vegan set menu including sushi, tempura and some cold noodles. Free water and green tea also. The sushi was very nice and the tempura was also pretty good but I found the noodles a bit underwhelming and they first served us non-vegan noodles I think. This is due to them removing my dish half way through my meal and replacing it with a completely new one. I noticed no difference either way in terms of taste but obviously it’s disappointing when someone can make this type of mistake. Overall I thought the food was pretty good but I didn’t enjoy that everything was cold and the price was also pretty high compared to Tokyo. I’d still recommend it though!
One thing you may have a hard time finding in Japan are soba, tempura and sushi in vegan. But this place has it all. With prior reservation you can enjoy their vegan unajyu which I hear is pretty amazing
English is below 今は土日しか営業日していなく2日前までに予約しないといけません。 電話で予約ができないため、Web予約が必要ですがメニューの中にヴィーガンのコースが記載されておらず。。。 問い合わせしたところ返事も返ってきませんでした! 休日に問い合わせしたところ、2日前じゃないから無理と予約させてもらえませんでした。うちは特殊だからと、、、なんの特別感を出しているのかわかりませんが、仲居さんの対応もとても失礼で事情を説明してもそんなの知るかと言わんばかりの感じでとても嫌な思いをしました。 This restaurant is only open on Saturdays and Sundays at the moment, but we have to book 2 days in advance. I couldn't book on the phone (they didn't answer Monday-Friday) so I tried to book online but they didn't have any vegan options available. So I made an inquiry on their website and asked them to contact me. I called them on a working day (Saturday) and asked about the booking. They told me that because it's not 2 days in advance that I cannot book. I explained my situation but the staff (I think the owner, older woman), but she was so rude to me, I felt very upset after speaking to her, and decided to never try to book here again.
When I arrived and asked about the vegan options, I was informed that the only one they had at the moment was the mock eel, which they seemed extremely sorry about. It came in a set with soup and pickled vegetables. Before my meal came I was offered to chose between warm green tea and fresh water. The pickled vegetables seemed very fancy as I was served a variety of them, it was tasty and quite salty. The soup had a very mild taste, nothing too special but ok as it was by no mean the main point of the meal. The rice tasted like it was a really good quality of rice. I haven't tested unagi (eel) before so I don't know how it compares to the real kind but I really liked it, there was a really nice balance of tastes with some umami flavor to the seasoning sauce. The restaurant is in a traditional Japanese house so the atmosphere is really cool ! You have to remove your shoes before coming in. The staff wears kimono (or yukata I can't remember). There are several small room and as the restaurant wasn't really busy I was alone in a room, but there were other customers in other rooms.
We order both of the vegan menu, everything was delicious and traditional prepared. Lovely presentation!!!!
