The sides were delicious, but unfortunately, the enchiladas were lacking in flavor. The filling tasted simply like steamed vegetables with minimal seasoning. I visited shortly after the storm Harvey, so I wonder if the rush of customers affected the quality of the dish. There was definitely something missing - it was quite bland. A tip for vegans: be sure to ask the server to skip the white or ranch sauce that comes with the chips.

At Chuy's, my vegan trick is to order the chalupa and enchilada plate with some modifications: I ask them to remove the cheese and chicken from the chalupa and replace it with avocado slices, and to substitute the chicken enchilada with a veggie enchilada with ranchero sauce and no cheese. One of the food runners even commented as he brought the plates to me, saying, "I don't know what this is but it looks delicious!" ... And he was right, it definitely is!
