Because the boss and his waiter can't tell us if there's gluten in a dish! It's alarming when we go to the restaurant with a seriously allergic guest. I asked to see the soy bottle where she told me that there is no gluten and I found, in English certainly, wheat in the list of ingredients, but I am not allergic to anything I found my entrance and my excellent dish. I'm gonna go back, but I'll come back with some non-allergic people.
