A small point of feedback for the whole group regarding the trays you use: they are too small. I regularly see your staff struggling to fit everything on them (starter, main course, dessert, drink, etc. . This is a real ergonomic improvement for your staff, but also for your customers who will no longer see your lovely pastries on coffee saucers . But I must emphasize that the team is fantastic!
