Ordered the white rosemary pie. Pizza crust was good but the pizza itself was a little bland. Maybe if the caramelized onion were dispersed a little more evenly or there was more rosemary. Service was relatively quick and food was hot.
I held my wedding celebration there, and it was absolutely incredible! From the staff to all the accommodations, everything was perfect. The menu was delicious, and I loved every dish! Thank you so much for making my day so special!
I was once advised by one of my favorite Yelpers when he goes to a new pizzeria, he always orders a plain slice with a glass of water. This way, he can truly taste how good their pizza is. Taking his advice, Hubby and I decided to order a plain. At Corbo and Sons, you cannot order by the slice. Hubby and I ordered a 12 plain personal pizza. Believe me, it's big enough to feed two people. If you so desire, you can order a glass of wine or beer to go with your pizza. After ordering, we waited for about 13 minutes and our pie was ready. I truly appreciated their fast service but the question remains: is their pizza delicious? Have you ever had cheese that was so chewy and oddly enough, balls up in your mouth as you're consuming the slice? The reasoning behind that is two words: old cheese. Hubby and I ordered a 12 plain personal pizza. Believe me, it's good enough for two people. I took my first bite. The sauce was seasoned nicely with some oregano and the cheese was fresh. Very good start! My only complaint is that the thin crust was a bit soggy. It wasn't too bad but for a thin crust, I was expecting it to be crispier. The staff and service were very good and we will be returning to try other things. It passed the plain pizza test.
We were a party of three, having just explored the farmers market nearby. We started our meal with an appetizer of veal and ricotta meatballs, which were a fantastic choice. For our main course, we ordered two small pizzas: a Margherita and a white rosemary. Of the two, the white rosemary was definitely the standout. It featured ricotta, confit garlic, and caramelized onions, all cooked to perfection with just the right amount of garlic flavor. Most importantly, the pizza had the ideal fold without any flop! If you're dining with just a few people, you can expect to have some leftovers. Corbo Sons is definitely worth a visit if you're in Holmdel and in the mood for brick oven pizza.
