the owners of this place know what vegan means, and there are a few dishes available sansai soba and sansai udon. it is a warm and refreshing broth with mountain vegetables like mushroom and garlic, really tasty! They can also edamame and nozawana (some of how picky scalps.) In yudanaka we found it pretty hard to get everything really vegetarian/vegan. the owner of a pizza place then yariya has a bit further on the road in shibu onsen. it was a small place, scratched with colorful figures. they even had a handwritten English translation of the menu with 2 vegans and 1 vegetarian oriented on it. we had vegan handmade soba with regional wild vegetables and enoki mushrooms and a nicer. both were delicious and cheap. we were blown away from the friendly service, the good quality of eating and that it was also a non-smoking place. if they are in the opposite, they should try it out!
In the main street of shibu onsen, this restaurant has not really a sign, it is only from koishiya ryokan and the public onsen. the place is full of small trinkets, and the small old couple that leads the place has not spoken much English, but were very nice! they have marked a tiny menu with vegetarian/vegan with udon or soba salat. also offer edamame as starter. she asked if I wanted suppe, I got on vegan and she brought me out of salat, so I can only assume that the suppe is based. very affordable, and they bring them chopped apples at the end (which was so delicious.)
Handwritten vegan/vegetarian menu available (only 1 vegan option, but its so tasty) fantastic vegan meal served by homemade soba noodles and salad served in a traditional environment with some interesting trinkets fill the walls. at the end she brought out a plate of freshly cut fruits. so delicious and fresh. cant recommend this place enough!
