Einfach angenehm und zufrieden. Frisches Essen und die Kundschaft wird richtig gut bedient.

We had a wonderful evening in the hæbel. The whole staff is more than friendly and accommodating and where I start eating. Also for vegetarians there was always an equal alternative and each gang was excellent.

The Haebel is an enrichment of the Hamburg cuisine. La Cave as an Aperitiv Bar and entering the world of natural wines is a highlight with excellent service. La Cave's motto continues in the restaurant based on excellent wines. A Roche Audrand and Le Grand Vlanc remain in my memory for a long time. Thanks for that! The menu is as promised Nordic, French. A cattle tar with oyster foam remains in memory as well as a black cod. However, a pulp bites easily on the acidity of the secondary components and the wine growing line. The wine tasting is pleasantly generous. The ambience is typical of the gravel; for my taste too loud, slightly dirty and too tight. The deficits are intercepted by a very attentive and nice service. Given the size of the part, the price level is above the level of the evening, which is why unfortunately only 4/5 stars remain. We definitely come back, it was a very nice evening. Thank you.

Michelin star in St Pauli is obviously an interesting proposition, not least when visiting an old neighborhood later in life. Hæbel is a small, intimate restaurant close to the street and featuring an open kitchen with New Nordic, German, French and Japanese inspirations. Menu consists in a choice between Fauna or Flora. As habit commands when visiting Michelin level places we chose Fauna. It appeared that a wine pairing option didnt exist but the wine card was quite decent for a place of this small size. However, problems began when we asked for recommendations since we did not know the menu. Some like white, some like red, there will be fish in the beginning but if you like red you should go with red . Fair statement but it s not guidance expected at this supposed level of restaurant. Food concept is smallish servings that provide the chef a range to show off a bit while still giving a bit to both taste and chew. For us at least the food fare somewhat derailed. While the were moments of deliciousness especially in the seafood servings there were also the uninspired and a stumbling into the abyss. The absolute trough being sweetened lettuce on top of filled pasta !? Maybe there was a German reference we didnt get, and maybe some people with a certain childhood would experience a Ratatouille moment but we didnt get it. At 500eur for 2 incl drinks Hæbel was not a great sell, despite in the situational and inserted nostalgias

An exceptional restaurant that impresses across the board. You immediately feel at home upon entering: The small, stylishly furnished room exudes an intimate and relaxed atmosphere. The menu is creative, modern, and thoroughly thoughtful – every single component is perfectly coordinated and demonstrates the passion with which head chef Kevin Bürmann prepares his dishes. We were particularly impressed by the way regional ingredients are presented in exciting combinations. Each course is a little surprise and, at the same time, a true taste experience. The service is attentive, warm, and professional. You can sense that the team isn't just working, but is a dedicated host. All processes seem seamlessly coordinated yet very personal. The open kitchen makes the evening even more special: You can watch the chefs at work and immediately notice the dedication that goes into each plate. The prices are high, but justified in every respect – for the quality, creativity, and overall experience, you're truly getting something exceptional here. A restaurant you'll want to visit more than once. Highly recommended for anyone looking for culinary highlights in Hamburg!
