We can’t thank you enough for your creativity and thoughtful details. A very special thanks to our waiter and manager that went out of their way to make this possible in a very short notice! You guys are amazing and we will be forever grateful. Thank you for making this one of the most memorable moments in our life.

And there is no... read more Apparently, this has been here for four years… which, as of today’s date, means they opened about 2 months into the pandemic. And they made it. And there is no doubt in my mind as to why. After living in Texas for 10 years, Mexican food is complicated for me. Neb Mex is a thing… and an unfortunate one. Copal is Mexican… sweet, sweet, delicious Mexican… that understands where we are as a region. When I try a New Mexican restaurant, if Carne Asada is on the menu, it’s my go to as it tells you everything you need to know about the quality of meal you are having. The Carne Asada here perfectly illustrates what I mean by knowing where we are in a fajita style preparation, it was out of this world… with a small side of mashed potatoes worked into the sizzle. From the chips and salsa, to the cocktails (get something with what Luis told us was a Jamaica flower delicious!! , everything was outstanding. Speaking of Luis he was our amazing server. Knowledgeable, personable, attentive and fun he was the perfect host for a great exp. We will be back soon!

Love this place some great authentic food and very reasonable prices for portions. Happy hour is great. We've been there twice and both times were fantastic I cannot wait to go back and try more of their menu! The service was excellent and the atmosphere when we've been there is great, they offer nice patio seating as well as well spaced out indoor seating. It looks like they also have a small private room for larger get togethers. Update to review: We have been here weekly since our initial visit. The shredded beef quesadilla is excellent as well as the chicken nachos and the spicy cheese dip. You do have to ask for chorizo specifically for the cheese dip I found out, something to keep in mind. I spent many years living in Phoenix Arizona and the food at copal is authentic, and better than any of the places frequented in Arizona. The flavors are excellent and it is a great value for what you get.
