The second bowl of the day is soy sauce niboshi soba, you can choose from flat oodles and thin。oodles. Deliciousness and two kinds of chashu are delicious.
I was told, Muginawaya in Fukui City is one of the best in Fukui prefecture. So I had to try. Even before the opening at 11 the waiting list was long. At the end, I was able to press at 11:30. I ordered their recommended Shoyu Chinese Soba rays for 820 ¥ and added an aromatized egg for 100 ¥. Not bad yet... The chefs really took their time to make every part, take care of each bowl. You can taste the results in broth and noodles: the soup with a hint of fish and chicken and the noodles firm and tasteful. It was a bit heavy on the oil. The part was reasonable and the egg was soft. I could definitely eat more of this soft chashu and next time I will be sure to get more. And there will be a next time!
