Vanilla doesn't have to mean ordinary. On a graham crust we add our smooth velvety cheesecake; flavored + vanilla bean; then top it in a pillowy cap of vanilla bean mousse.

This monster sandwich is done the same as our tradtional Reuben but made between two potato pancakes in lieu of bread.
