Proof has the... read more I found this downtown Mesa, AZ old-world charm bakery while on my morning walk. I love bread and I’ve tried a lot of bread in my almost 60 years. Proof has the most flavorful and best textured sourdough bread I have ever eaten. I buy their bread quite often now, and I am very excited that they grow and mill their own flour. It’s also always the “go to treat” when my grown children come into town. I also highly recommend their morning pastries, especially the almond croissant! My daughter loves the olive loaf-wonderful, she says. Definitely go!

I have been a fan of the YouTube channel for years and wanted to try it myself. I was not disappointed, in fact it was better than I thought it would be. I enjoyed it so much I went back all 3 days I was in town and brought back a couple loaves for my wife to try. Honestly some of the best bread and baked goods that I have ever had!

I’m always down for a slice of pizza too, or a chance it makes it home to share with anyone! Hefty, thick slices baked to perfection.

Their various sourdough breads are flavorful, the pastries are always fresh, and the quality of their ingredients seems to speak for itself. I have been especially excited by their rotation of special/experimental menu items in the last few months, most recently more savory pastries. Proof is one of my favorite local businesses Downtown Mesa simply wouldn't be the same without it!

Pair perfectly with a coffe... read more I love everything I’ve ever tried from Proof but my absolute obsession is the rosemary twists with the perfect touch of flakey salt! Pair perfectly with a coffee or a charcuterie board. I usually get my treats from the Gilbert market but finally got a chance to go down to the store front in mesa. We tried one of their chocolate chip cookies- fantastic! Pain au chocolat 10/10!! I need to make it there asap to try the berry mascarpone tart before it’s gone. I have also preordered the most beautiful sourdough loaf for Thanksgiving- would highly recommend it as the perfect centerpiece!
