Welcome to Sapsua, where we celebrate the essence of non-traditional Vietnamese cuisine in the vibrant heart of Colfax. Our name, sắp sửa, translates to ‘about to be’ or ‘almost,’ embodying our philosophy that growth and evolution are continual journeys. Here, we inspire both our team and our guests to embrace the idea of never settling, always striving to be better than we were yesterday. At Sapsua, we invite you to share in this journey as we evolve and grow alongside our community over the years to come. Whether you 're planning a cozy dinner for one or a lively gathering with friends, we cater to all, accommodating parties from 1 to 10 guests through our reservations system on Tock, released 30 days in advance. For those who prefer spontaneity, half of our bar seating is saved for walk-in guests each evening. Planning a special event? We offer full buyout options for private gatherings, seating up to 50 guests for a dinner or 100 for a cocktail reception. Our space is designed to bring your vision to life, so please contact us at least 6 weeks in advance for inquiries. We’re committed to an inclusive dining experience and do our best to cater to dietary restrictions, though we cannot provide an allium-free, capsicum-free, or fish-free menu. A limited vegan and vegetarian menu is available, and we are happy to accommodate known dietary needs at the time of booking. Convenience matters, so we provide free parking options, including street parking and a garage shared with Tattered Cover Bookstore. As for ambiance, there’s no dress code—come as you are and enjoy your time with us! Children are warmly welcomed, complete with food offerings for kids and fun coloring pages to enjoy. And if you’re celebrating with cake, feel free to bring your own; we’ll gladly slice it for you! Wow!!! Sap Sua is an incredible restaurant and easily the best meal I’ve had in Denver. The menu offers expertly curated flavors in every dish that keep you coming back for more. From start to finish, the experience was outstanding. Sap Sua offers a wonderfully creative approach to Vietnamese cuisine, with exceptional and thoughtfully crafted dishes. The staff are highly trained, attentive, and clearly care about food sensitivities and restrictions, as shown by the thorough questions they asked before we ordered. For our group of four, they suggested 6-8 dishes, which was very helpful. We ended up ordering six, and it was just right. The standout dish was the scrambled steamed egg with brown butter, rice, and roe—easily the best I've had in a long time. Considering I recently traveled to Vietnam and live in Spain, where great food is common, this is high praise indeed. We also enjoyed the charred cabbage, gem salad, chicken thighs, hamachi collar, and kale, all of which were delicious. Another highlight is their excellent selection of mocktails, non-alcoholic wines and beers, and plenty of options for non-meat eaters. The final bonus was the price—we spent about $50 per person for an exceptional dinner, which is far better value than many mediocre lunches I've paid for in Denver. Highly recommended. I had been wanting to visit Sap Sua for a long time, but reservations were always full. Finally, I got the chance and absolutely loved it. Chef Ni and the entire staff were incredible—right from the moment we arrived, we were treated like family. The endive salad was fantastic, the sweet potatoes were incredible, and the soft scrambled eggs with brown butter are something I need in my life every day. The crispy fried chicken was delicious, too. I’m already looking forward to my next visit. Denver has many outstanding culinary spots, and Sap Sua definitely ranks among the best.
