They have the Bluefin tuna and belly salmon so why not allow customers to pay the extra amount or difference to get better sushi fish inside the rolls? Not asking for it for free. Paying for it. You can set price at $3,$5 or whatever to upgrade fish inside rolls but to say no or not give option is not so good. Any upgrade or upsell option should always be an option for customers
