We feasted on an amuse of tuna tataki, salade d’haricots verts with tomato confit, and duck sausage (I could have easily had an entire dinner of this salad), and monkfish with rice from the Carmargue in an exquisite reduction. If you are in Cavaillon you have to dine at L’Envol. In fact, it is well-worth a substantial detour!

Paired with an excellent rosé from the Lubéron. Followed up with a fantastic piece of Angus, cooked to perfection and accompanied by sumptuous, caramelised prune sauce, puréed zucchini and a black olive tapenade from Nyons. Worth the detour.
