**A Mixed Bag at Kindling: Brighton's Culinary Journey** Kindling, a restaurant in Brighton, presents a varied culinary experience that elicits mixed reactions. While some diners revel in the delicious dishes and attentive service, others express disappointment over limited menu choices and inconsistent food quality. Highlights include well-executed mains and creative desserts, like the carrot cake tiramisu, alongside issues like undercooked fish and excessive salt. The atmosphere is generally praised, though the music may not always align with the dining experience. As the restaurant faces liquidation, it exemplifies the highs and lows of a dining destination within a vibrant culinary scene.
We went out for dinner where only the tasting menu (£80) was available, but this was our preferred choice for a special occasion. I was able to easily swap a dish from the vegetarian menu to the meat menu (the halibut) without any hassle. The food was not only delicious but also quite filling. I particularly enjoyed the courgette fritter from the chef's snacks, the walnut and carrot tiramisu, and the Vigorina Fizz—which, in hindsight, I would have preferred to have a bottle of instead. My partner was also extremely satisfied with the food. The staff made a lovely effort to explain each dish, which added a nice touch to the experience. For those interested, the tasting menu includes vegetarian options.

The atmosphere was delightful as well, creating a warm and inviting environment that enhanced the dining experience. Overall, I highly recommend this restaurant for anyone looking for a top-notch meal out.
