I have to say that the choice of trim was good. The reduction of delicious balsamic vinegar and quality cheese. I worry about the dough. Cassante, very fat, no alveolation. Even if I didn't expect to find the standards of the Neapolitan I was still disappointed. It really looked like a paste that was poorly petrified and unreserved.
