A fabulous bartender at bamboo called lara recommended ristorante CaBo’ and even called in our reservation. CaBo’ is a beautiful, modern restaurant with an architectural design. marble, concrete, soothing blues and gold are used in wonderful harmonie. ricardo, was our charming, linguistically helpful server, and he helped us make excellent decisions from the creative menu. the puttanesca cuttlefish has been faceted, with an innovative grilled tinten fish and puttanesca jelle, sitting next to a traditional preparation of cuttlefish puttanesca; new world vs. old world. my grilled purple cauliflower had a hauch of sweet, almost like beet. rind meat wange ravioli was an art work, with fabulous aromen, while the achiote steak was delicious and savory. desserts were also kreatiw. CaBo’ is not her traditional restaurant bolognese. the cuisine of cabo produces innovative food that disassembles the traditional recipes in food for gourmets. it is a foodie goal. there is nothing “touristy” or fake about it. CaBo’ is for people who appreciate culinary art. I loved the experience.
