As if the explosive mixture of greasy & sugary conquerors and corny & spiced up natives (talking food here ;) that produced Mexican food was not enough, Fando &... read more As if the explosive mixture of greasy & sugary conquerors and corny & spiced up natives (talking food here ;) that produced Mexican food was not enough, Fando & Lis seems determined to find parallel gastronomic universes, by asking "what if?": What if Colombo had instead sailed from Genova, or Barcelona?Then, of course, you would have chapulines (crickets!) in your montaditos ("tapas") or pizzas, or better, in both! (accompanied with avocado or pumpkin flower, respectively). Your lasagna would be spicy and made with tortillas ("Pastel Azteca"). The goat cheese would shine amongst the darkness of cuitlacoche, an ancient delicacy (made with, ahem, corn fungi). The creamy soups would be served inside a round bread, and the salads irrigated with dark oil (from pumpkin seeds, not the Gulf!). And to top it all you would finish with the "Adictivo" chocolate cake and a tasty maracuja-injected mezcal.So, ok, they have followed these alternative realities a bit farther than historical premises would allow. And the result is, appropriately, surreal, in taste, ambiance and company.One word of warning though: don't go if you're in a hurry. They seem to--unknowingly--follow some of the premises of slow-food, politically, and literally, as would fit the free-for-all nature of the place, where you may end up doing some of the cooking yourself, or taking part in an impromptu performance. So you need a bit of patience or good company, first, and determination, later on, when you have to fight the urge of having one... more... surreal... bite.
