Carillon Bistrot - AYMAVILLES

Carillon is a unique pearl throughout the valle d’aosta. a while ago I wrote for trip advisor of another excellent restaurants in one of the lateral valleys, val grisenche (flowing in valle d’aosta). I described it as unique. after long months, when I cross the many later valleys, I can only say that I have come from another such rarity. carillon sits on a beautiful balcony in the village of ozein, on the slopes of the mountain punta della pierre, a peak with a highly touching geometry. from this restaurant there is a magnificent panorama that runs from a unique angle to the full mont blanc and all the way to the grand combin, a hundred kilometers from alpine dramatic peaks. carillon has an outside terrace, in the form of a large tent with sun windows and an elegant inside seat. my companion and I, both writing in the business of books, travel more than half an hour, often or sometimes the week, just sitting in this beautifully decorated tent, where we work in absolutely untouched silence, as we see in the far away these eternal summits. lunch, after hours of work, a high-quality lunch is served with dressed, which is the cook to a famous refined culinary, recently retired from mailand or turin. in fact, the chef is a surprising young man from the mountain chain, which is simply incredibly resourceful, spaghalous and light in his designs, a triple of adjectives that rarely come together. this covers its primi, with a really inappropriate series of interesting pastas, its secondi, with never-pedestrian servings of bistecca or roasted meat, and the high point, really refined homemade cakes, each as innovatiw as the next. you just hope that some chic gastronomic hands of mailand or turin do not discover this jewel and sneak it away into the big city. the translation as host and manager is a young lady, also full of gnade. the combination of unusual sun exposure and the energetic-cum-elegant character of the host make carillon a delicate pearl in the midst of mountain sports where it is most rare to find such fines. the two hostes marvel with optimism, reflected in the music played in the evening and in the beguiling interior decoration. as I said, a pearl.
