This restaurant is a masterclass in cooking technique and seasonal flavours. The restaurant is really intimate with 8 to 10 diners around a bar facing the kitchen. Tasting menu only. Toshi and crew finish dishes and plate up in front of the diners, which is mesmerising and quite the high wire act. Dishes are a celebration of Valencian and wider Spanish fish, vegetable and fruits. Each dish was really well balanced, coherent and delicious. Strong focus on fish and seafood. Surely worth a Michelin star. Wine list is small but very well curated, with super interesting picks such as El Corregidor cava from Luis Perez made from palomino fino and pedro ximenez. Service was friendly, correct and attentive. Cannot recommend highly enough.
A must visit in Valencia. Superb flavour combinations. Beautifully presented. The restaurant is tiny and everyone sits at the counter watching Toshi meticulously prepare each course.
