I visited the ramen shop I had been curious about in the evening. The friendly owner and the old-fashioned atmosphere of the restaurant were oddly calming. I ordered the bean sprout ramen, which had a gentle yet garlicky soup that reminded me of traditional Kumamoto tonkotsu ramen, with slightly firm noodles that complemented it perfectly. Of course, the volume of bean sprouts was more than I expected, and I was satisfied. The chashu was also delicious, with the harmony of the flavor of the meat and the sauce showing that it was carefully cooked. The prices were reasonable, and there weren't too many customers, so it felt like a hidden gem of a restaurant.

I had the Moyashi ramen for ¥650 and the Champon for ¥700. The restaurant had a traditional atmosphere. The ramen had a rich tonkotsu broth with a strong aroma of roasted garlic, typical of Kumamoto ramen. It came with bean sprouts, 3 slices of chashu, boiled egg, wood ear mushrooms, and green onions. It was a shame that it didn't have a soft-boiled egg. The Champon also had a pork bone soup base with a milder flavor due to the sweetness of the vegetables. Thank you for the meal.

Visited Sakaera Ramen in Sakae-cho after 1 p.m. on April 24th. The restaurant is beloved by locals, as you can feel from the atmosphere. While various types of ramen have become trendy recently, Kumamoto Ramen remains popular with its traditional taste. The flavors are gentle and soothing, with the tonkotsu broth leaning towards a lighter taste and the miso being rich and flavorful. The owner's warm personality adds to the overall positive experience.
