Was H Yokose at そば Chǔ Shuǐ Yuè a mag?
This restaurant offers soba noodles with a view of the Tien Falls in front of you. When I saw it online, I imagined a typical drive-in restaurant along a national road, but it turned out to be a stylish and modern soba restaurant. The soba noodles are made from 100% buckwheat and are thinly cut, with a perfect firmness and texture. Normally, 100% buckwheat soba noodles are white like Shinshu soba, but the soba noodle... This place uses 100% buckwheat flour, yet the noodles are not dry and have a firm texture. They don't have a strong flavor, so they are delicious even without dipping them in the soba sauce. There is salt provided on the table, and adding it makes the noodles even more delicious. The soba sauce is slightly on the thicker side, so it's nice to dip the noodles in it a bit. The tempura is crispy, and the rice is barley rice, which is good for your health. The rice was also cooked deliciously. You can enjoy your meal while overlooking a waterfall, and even the dessert, a pudding made with soba flour, was delicious. We enjoyed every bite until the end. It was truly delicious. We will come again. Food, menu, ambiance, exterior.
We stopped by on our way back from camping in May 2022. We arrived right as the restaurant opened and were the first ones inside. We were led to a counter seat with a view of a waterfall. Within a few minutes, other customers started to come in and the restaurant quickly became full. Even on a Sunday, there were customers waiting outside before we had finished eating. I ordered soba with tempura. The soba noodles had a good texture and thickness, making them easy to eat. The broth was delicious as well. The tempura was made with fresh vegetables and was not greasy, making it easy on the stomach. The broccoli tempura was particularly fresh and the tempura of the sea bream was also delicious. It's no wonder there was a wait at this soba restaurant. The staff worked efficiently and the wait was not stressful. Despite having a view of the waterfall from the counter, the food was so delicious that I was too focused on eating to even notice the waterfall.

Normally, 100% buckwheat soba noodles are white like Shinshu soba, but the soba noodles here are brown and very flavorful. The tempura and rice are also very healthy, with rice containing pressed barley. The location is great and it was a delicious soba experience. We were surprised to find out that the soba flour is from Ibaraki, not Kyushu, when we saw it on our way back.
