Chicken Parmesan Recipe

Season the flattened chicken with a hefty pinch of salt and pepper, then beat some eggs in a shallow bowl. Mix breadcrumbs and Parmesan cheese in another bowl for the coating. Dust both sides of the chicken with flour, dunk them in the beaten eggs, and coat them real well with the breadcrumb mixture.

Let those breaded chicken breasts chill for about 15 minutes while you heat up some olive oil in a big ol' skillet. Cook the chicken until it's golden on both sides, around 2 minutes per side. Remember, we'll finish cooking it in the oven so it doesn't need to be completely done yet.

Transfer the cooked chicken to a baking dish and top each one with tomato sauce, mozzarella cheese, fresh basil, and provolone cheese. Sprinkle on more Parmesan and a drizzle of olive oil before sticking it in the oven. Bake until the cheese is nice and browned, and the chicken is cooked through, about 15-20 minutes.
