Pizza Margherita Recipe
To begin with, you'll need some pizza dough. You can make it from scratch if you want, but I find that store-bought dough works just fine. Roll it out on a floured surface until it's nice and thin, just the way she used to like it when she was a toddler.
Next, you'll need some fresh tomatoes. Back when she was a baby, I used to grow my own tomatoes in the backyard. There's nothing quite like the taste of a sun-ripened tomato on a pizza margherita. Slice them up and arrange them in a neat layer on top of the dough.
After the tomatoes, comes the cheese. Ah, the cheese! My daughter always loved a generous sprinkling of mozzarella on her pizza. I would shred it myself, just like they do in the old country. Cover the tomatoes with a thick layer of cheese, making sure every inch is evenly coated.
Finally, it's time for the finishing touches. A drizzle of olive oil, a sprinkle of salt, and a few fresh basil leaves scattered on top. Back then, when she was just a baby, I would gently tear the basil leaves with my fingers and watch as she giggled and reached out to touch them.
Pop the pizza into a hot oven and let it bake until the cheese is melted and bubbly, and the crust is golden brown. The smell of that pizza margherita cooking always reminded me of her baby days, when she would take her tiny hands and try to grab a piece before it was even done.
And there you have it, the perfect pizza margherita. I may grumble and pretend to be annoyed when she asks me to make it, but deep down, I know that it's all worth it to see her smile, just like she did when she was a little baby.
