Enchiladas Recipe
Now, I've put my own little twist on the recipe over the years, adding some extra spices and flavors to make it my own. My kids just love it when I make enchiladas for dinner, they always say it's their favorite meal. It warms my heart to see them enjoying something that's been a part of my family for so long.
To make my enchiladas, first you'll need some ground beef, onions, garlic, and of course, plenty of cheese. I like to brown the beef with the onions and garlic, adding in some cumin and chili powder for that extra kick. Then, I roll up the beef mixture in some corn tortillas, placing them in a baking dish.
Next, I pour some homemade enchilada sauce over the top, making sure to cover each enchilada completely. Then, I sprinkle on a generous amount of cheese before popping them in the oven to bake. The smell that fills the kitchen as they cook is just heavenly, it takes me right back to my own childhood.
Once the enchiladas are nice and bubbly, I pull them out of the oven and let them cool for a few minutes before serving. I like to garnish them with some fresh cilantro and a dollop of sour cream, just to add that extra touch of flavor. I always make sure to make plenty, because they're always a crowd pleaser.
