Easy leftover recipes: transforming extra food into new dishes
Everybody who has already celebrated really hard in the evening or who has organized a big party at home - the most famous example is the big family dinner at Easter, Christmas or birthdays - knows that most of the time you will still have something the next day and the day after next and sometimes the whole next week. Then there is a whole week of roast venison with dumplings or the cold pizza from the evening before for breakfast.
But this article does not talk about the leftovers already prepared, but rather about the leftovers that absolutely have to be processed today so that you don't have to dispose of them - because that would be a pity!
Dishes from leftovers
Probably the best-known dish - and possibly the most logical one - is soup made from vegetable leftovers. Here, all remaining potatoes, leeks, carrots and the last celery are simply boiled up in a stock. Almost like the normal vegetable soup. The only difference was the shopping list, which in the case of the leftover soup was not aimed at their preparation. If you still have sausages, pork chops or other meat there, you can also throw it into the soup and round off the dish.
Also, the most different stews, as for example the Soljanka, were created by throwing the individual vegetable remainders together. But the beauty of it is that these dishes have proven their worth until today. You can see that you should not always throw away things that are left over.
In addition to these two vegetable leftovers, you can of course also conjure up other foods into truly delicious dishes. For example, you can make a delicious casserole by adding vegetables, meat and some cheese to leftover pasta or potatoes.
Now that we are on the subject of potatoes: Boiled or jacket potatoes can not only be made into a casserole with cheese, but also into fried potatoes or even mashed potatoes. This is exactly how the more or less well-known "farmer's pan" or even the farmer's breakfast came into being: Just throw the leftovers - mainly potatoes - into the pan with a little oil and you have not wasted any food and still have a full stomach. Even old mashed potatoes can be made into small buffers, which can be fried briefly and then you have a small snack or even a fine side dish.
If you have rice left over instead, you can also use it. You can either use the fried rice with vegetables, egg and some meat (so you don't just get rid of rice) or small rice fryers, which you can either eat on your burger or just like that with herb curd cheese. For all those who have a sweet tooth, there is also rice pudding as an alternative.
Old bread, on the other hand, can be used as croutons in a soup or as bread dumplings. Actually, everything that involves softening the rock-hard pieces is possible here. In addition to the dumplings, you can also prepare a vegetable or meat sauce for further processing.
Last but not least of course the pizza itself. Prepare the dough, throw the leftovers on it, put cheese on top and the masterpiece is ready - let's see if that tastes good.

If you don't always want to try the old familiar dishes, you can of course vary them on restaurant menus. From the potato pizza to the bread casserole, everything is possible.
