If I order carbonara from the menu, then I expect the carbonara as described with Guanciale egg and Parmesan or Pecorino and not with dry ham cubes and cream. Cream doesn't belong there and neither does ham cubes, or I have to declare it that way. The same applies to the Amatriciana or declare it differently.
