Don Carlos Mexican Restaurant and Cantina was founded on January 18, 1986 by Gerry and Christos Stathatos in Houston, Texas. Located in the Harrisburg/Wayside neighborhood, the restaurant offers a new look and an enhanced menu. After experiencing great success, they expanded in 1991 by adding 1,000 square feet of dining area, increasing seating capacity to 170, and 1,500 square feet for a larger kitchen. Additionally, they added parking across the street to accommodate the growing number of customers.
