As a person that’s allergic to gluten I almost always find a way to get something to eat, as I try to be as little complicated as possible. Obviously this small caffe in Palma didn’t have any gluten free options but upon asking if they could serve me just avocado and tomatoes or something similar (everything also available on a normal sandwich) they said that it’s impossible.
