During our visit to Uray on March 22, many places were closed. Mi Mexico, however, remained open while most others in the city did not. The interior is beautiful, adorned with bright and colorful Mexican artwork. The staff was quite pleasant. The vegan options here felt quite bland, as if they were more focused on a diet rather than flavor. Just a heads up, they use chicken stock in their rice, which I had to inquire about.
