If you keep the sour cream, cheese, and black beans out, this dish is vegan. The roasted beans are vegan as well. We’ve tried vegan fajitas at several Mexican restaurants in the city, and these are by far the best! They come with peppers, paprika, squash, zucchini, mushrooms, broccoli, and spinach.
