There aren't many vegan options available. During our visit, there was only one Beyond Burger and a vegetarian chili that could be made vegan by omitting the cheese. The restaurants in the park have always been on the pricey side. The hummus plate was labeled as vegetarian, so I'm assuming it contains dairy in the bread.
