Brutø, the sister restaurant of The Wolf's Tailor, is a small-format dining venue that elevates Kelly Whitaker’s dedication to showcasing heritage grains as the cornerstone of the menu. Each dish, from freshly baked breads to daily flown-in oysters, seasonal Colorado-grown raw vegetable plates from the farmers market, and a comprehensive selection of wood-fired proteins and other favorites, is meticulously prepared using house-milled grains and a focus on local suppliers throughout the year. In addition, Brutø will oversee Free Market's entire hospitality experience, offering weekly community aperitivo hour, workshops, classes, hosted dinners, and events in collaboration with the 10 brands and merchants that make up Free Market, merging hospitality and retail in a unique way.

The restaurant offers a unique dining experience with exceptional food, especially the made-to-order sourdough bread. While some had mixed experiences due to vegetarian-focused menus and high prices, others enjoyed the plant-based and omakase options immensely. The intricate preparation of dishes and expertly paired wines impressed many diners. The staff, particularly Brandon, received high praise for their knowledge and service. Despite minor issues with the dining room temperature and lighting, the overall consensus is that Bruto is a must-visit spot for those seeking creative, well-presented dishes in a laid-back urban setting.
My husband and I went for their plant based menu. Everything was thoughtfully presented and worth every penny. It was definitely a unique experience watching it he prepared. Special to enjoy vegan food at this calibur. They definitely deserved the Michelin star!
Was fortunate to be at the restaurant the evening they earned their Michelin star and green star. The service was unparalleled. Anything I’ve experienced in Denver, with cuisine to match. The vibe is on point, the cocktails were incredible, the drink pairings worm a really lovely addition, and we left feeling satiated in full after 3 1/2 hours of dining. A must do/see in Denver! They accommodated our dietary restrictions with advance notice. The four of us spent just under $1k during their plant based menu feature.
Went with five girlfriends for a fun night. When we arrived we were sat at a long bar so we could hardly talk to each other. I asked if we could be moved to a curved part of the bar that was open so we could talk, but they simply said “no”. Our server was lovely and very fun. I believe the chef is very talented but this months dishes were all vegetarian and they were just ok. Maybe it’s on us for not checking on that? We were bummed and definitely not full or satisfied. It was so expensive to be disappointed. Maybe it’s better for a date night and check the theme if you go. The bread was the best part of our meal.
