I enjoyed dining at Spring Cafe in Aspen, Colorado. The Rueben sandwich I had for lunch was delicious and filling, although a bit oily. I also tried their chocolate chip cookies.

We tried the Tofu Juevos Rancheros, Red Curry Thai veggies, and pumpkin bread at this restaurant. All of the dishes were delicious and left us feeling satisfied but not overly full. The view of the mountains from the restaurant was also a nice touch.
I really enjoyed my sweet potato burger! I would definitely recommend it with a 10/10 rating. The restaurant was quite busy, so the service was a bit slow. However, if you are watching your budget, keep in mind that the food and drinks are a bit pricey for the portion sizes.
The food at this restaurant is excellent, and the outdoor patio is amazing. During our visit, my wife accidentally left her purse behind. Fortunately, a kind individual overheard our plans to go to another store and went out of their way to track us down four blocks away just to return her purse. We were truly shocked, as coming from New Jersey/Philadelphia, we expected the purse to be stolen instantly.
Good food. Lots of vegan and gluten free options and good fresh veggies... Probably moderately priced by Aspen standards, but pricey for elsewhere. Slow. Updated from previous review on Saturday September 27, 2014
I dined at Spring Cafe twice during my trip to Aspen. I tried the Rueben sandwich for lunch, which was delicious and satisfying, although a bit greasy. The chocolate chip cookie I ordered was on the dry and crunchy side. The next morning for breakfast, I enjoyed the tasty Blanca's Sandwich with the best tofu scramble I've ever had. The dirty chai latte I had was decent, but not exceptional. I highly recommend the tofu scramble at this restaurant, although it is a bit expensive, it's a great option for finding vegan food while on vacation.
