The dishes reflect the culinary culture of the place, simple in their composition but excellent for quality. In our two dinners we tasted three first of which two with local pasta (we remember the troccoli to the viestana, for example). Perfect cooking, superlative dressings for quantity and quality. To try the 'mittanella', a sort of square pizza with inserted in the edge the 'cacio' and we had never seen before. A note that surprised us very favorably is that you do not make particular use of spices (or cmq we did not perceive them) that can alter tastes. The waiters are in line with the local, ie from 5 stars (with Lode). After this experience we suspect that Foggia could be one of the (poche) Italian Culinary Capitals and this restaurant is a brilliant example of it.
