I never understood what people said when they describe fish as floakey. I know now! I did it! every single bite the fish perfectly cooked and the teig was just as good. there was a clear segregation between the two who was a little restless to eat, but that made it even better! that is when they know that they don't get uncooked teig to only awaken pure quality. tartare was good.
