I aim to revive the tradition of great BBQ in Randolph County by perfecting my dry rub technique for seasoning Boston Butts. Slowly cooked to ensure tenderness without overpowering smoke flavor, I use local pecan wood chips for a subtle hint of smoke. After resting, I remove excess fat and connective tissue, leaving behind pure pork goodness for our guests to enjoy.
